PALEO Chocolate Peppermint Donuts

It’s been a wild ride, but here I am, back in Iowa after my first quarter of college at Northwestern. And I gotta say, I wasn’t so sure I would want to come back home. But I changed my tune as soon as I remembered the extent to which my kitchen at home is well equipped–much more than any kitchen at school. Grating garlic as opposed to mincing makes a world of difference, as is having access to my stand mixer, a real toaster and–most importantly to this post–my donut pan.


Baked donuts are a great alternative to fried ones, and are perfect for anyone who doesn’t want to spend their entire paycheck on neutral oils every month to satisfy their donut cravings. Plus, these donuts are paleo.


I know what you’re thinking: girl, you just did a post on how you should be able to indulge without being guilty! And I know that. But not everyone can eat everything, and I happen to feel a lot less crappy after eating paleo baked goods than I do regular ones.


Since the snack mix wasn’t exactly baked, here’s is your more ~official~ start to holiday baking for this year. Best of luck to those still taking finals (sorry semester kids) and have an awesome weekend!



for the donuts

  • 1 cup Bob’s Red Mill paleo baking flour
  • ½ cup coconut sugar, sifted
  • ¼ cup cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup cashew milk (or any non-dairy milk)
  • ½ cup coconut oil, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract

for the glaze

  • ¼ cup melted cacao butter (can sub for coconut oil)
  • ¼ cup cocoa powder
  • ¼ cup powdered coconut sugar
  • ½ – 1 teaspoon peppermint extract


for the donuts

Preheat the oven to 350º F.

In a medium bowl, whisk together the flour, sugar, cocoa, baking soda and salt.

In a bowl with a spout, whisk together the milk, oil, egg, vanilla and the peppermint extract. Make a well in the dry ingredients and fold in the wet, being sure not to overmix.

Either spoon or pipe the batter into a donut pan greased with coconut oil, and bake for 14-16 minutes, or until a skewer inserted in the donuts comes out clean or with a few moist crumbs.

Let the donuts cool for 5 minutes before removing from the pan, and cool completely before glazing.

for the glaze

Whisk all the ingredients together until the glaze is smooth, then pour onto the donuts, letting the excess drip off.

I topped with red sanding sugar (NOT paleo) for the holiday cheer.
