Strawberry Mint Smoothie

Summer is coming to an end, but for some reason, hot weather isn’t *cough* climate change *cough*

Even though I’m way done with the heat, this smoothie makes it a little more bearable. I like to have it for lunch these days–it’s cold when you wake up, but by noon, your windshield is 100º and you realize jeans maybe weren’t the best idea.

The ingredients are on point, too: zucchini for a base, strawberries for some color, avocado for healthy fats, mint for flavor and coconut water to help replenish those electrolytes you lost sweating.

Plus, I topped mine with some extra mint to get fancy. I know, I know: I’m excited to get to fall posts too. Practically counting down the days.

  • ½ cup zucchini, steamed then frozen
  • 1 cup strawberries, frozen
  • 1 sprig mint (not the stem)
  • ½ small avocado
  • ½ cup coconut water
  • ½ cup water


Add all the ingredients to a blender and mix on high until you achieve a thick but liquid consistency. Add in extra water ¼ cup at a time if you want your drink thinner, and top with a sprig of mint to make it fancy.
