Fresh Mango Salsa

How do you like your mangoes? I know I recently did a mango post, but after snacking on that, I just needed more mango in my life. When mangoes went on sale at the local food co-op, I had to grab one and make this really quick salsa.


Ah, the perks of making one’s own salsa. You can add whatever you want, you know exactly what goes into it and you know it’s good for you. Plus, is this not the cutest? I love to eat the colors of the rainbow, not just because it means I’m getting lots of nutrients, but because it’s honestly just so much prettier.


To make this even healthier (and dare I say tastier?) I ate this salsa with the lime flavor Siete grain-free tortilla chips. Even though summer is coming to an end and we have to accept it, making the most of the tomatoes and mangoes before they go out of season.



  • ½ large mango, diced
  • ½ heirloom tomato, diced
  • ¼ red onion, minced
  • 2 teaspoons mint, minced
  • ¼ avocado, diced
  • juice ½ lime


In a large bowl, mix together the mango, tomato, onion and mint. Then, add in the avocado and the lime juice and toss again lightly, making sure not to totally squish the avocado pieces.

Serve with chips (I use Siete grain free).
