Almond Butter Bars

Are you ready to go back to school? Up until this year, I would’ve said no, but I’m super excited to be going to college in less than a month! Northwestern is on the quarter system, which means it starts in late September, but lots of my friends start school in less than a week.

Back to school can be a rough time of year, especially when it comes to eating healthy and delicious food. But don’t worry: these almond butter bars drizzled with chocolate are absolutely perfect for an afternoon snack to fuel up for doing homework or a sports practice.

Even though they taste like dessert, they’re really healthy–almond butter is full of healthy fats, which makes it brain food! Mixed with raw honey to boost immunity* and oats to give the body a dose of healthy carbs, this is a great snack to have if you’re getting beaten down by the first classes of the year.



  • ½ cup almond butter
  • ½ teaspoon vanilla extract
  • 1-2 teaspoons raw honey
  • ½ cup quick oats
  • 1-2 tablespoons coconut flour
  • 1.5 ounces paleo chocolate (optional)


In a mixing bowl, combine the almond butter, vanilla extract and honey together and mix until combined. Add in the oats and stir again until a thick batter forms.

Add coconut flour a little bit at a time until you reach a soft dough; you might not need all of it.

Press the dough into a greased, straight sided pan and freeze for 10-15 minutes until firm.

Drizzle with melted chocolate (I use Eating Evolved) and keep refrigerated until ready to eat.

* Note: raw local honey is said to boost immunity and protect against allergies
