What do you think of when you think of the word celebration?
I know that I think of dessert, and I usually think of ice cream, because I rarely have it. It’s special, delicious and perfect for a summer celebration of… well, anything.
Last weekend, I had a lot to celebrate. My boyfriend’s birthday happened while both of us were out of town, and our anniversary is tomorrow. Because we both happen to be busy, we combined the two into one big celebration.
Because I know celebrations can take up a lot of brain space, this recipe is super simple and only requires around 5 minutes active time in the kitchen. You know, so you can get back to celebrating whatever is happening in your life.
- 1 ½ cups mango, diced (1 large mango)
- 2 tablespoons coconut cream
Place your diced mango onto a baking tray or a plate and freeze for no longer than two hours.
Add the frozen mango and the coconut cream into a food processor and blend until smooth and creamy. You may need a splash of water to get the consistency you want. Serve immediately for soft serve or put into a freezer safe container for a harder ice cream.
