3 Easy Vegetable Dishes

Winter is the perfect time to sit down around a table and eat comfort food with friends or family while gazing outside and being thankful you’re warm. But it’s not so fun to have to think about being healthy at the same time. Who wants healthy food when all you want is something warm and delicious? Luckily for you, I have three super easy cooked vegetable side dishes that are both healthy and comforting.

Whether you’re into Asian dishes, strong flavors or odd combinations, there’s something here for you.

My first dish is one of my favorites. This garlic broccoli is insanely good. It’s garlicky and salty and you almost forget how healthy it is. The best part is that you only need four ingredients and 10 minutes to make it. By far the best way to eat broccoli.


Garlic Broccoli


  • 1 pound broccoli
  • 5 cloves garlic, minced
  • 4 tablespoons olive oil
  • 2 tablespoons soy sauce


In a large pan, heat up the olive oil until it’s shimmering.

Add in the garlic and let it cook for 30-45 seconds before adding in the broccoli.

Turn the heat down to medium low and cook for another 5-8 minutes, stirring occasionally. Add in the soy sauce and mix it again before serving.


The second dish is a roasted squash, brussels sprouts and apple salad. All these fall and winter foods mixed together is great, and the apple and the brussels sprouts balance each other out really, really well.


Winter Veggie Bake


  • 1 pound brussels sprouts, halved
  • 1 small butternut squash, peeled and cubed
  • 1 ½ honeycrisp apples, diced
  • 3 tablespoons olive oil
  • juice of half a lemon
  • 1 teaspoon salt
  • 1 teaspoon black pepper


Preheat the oven to 400º F.

In a large bowl, combine the brussels sprouts, squash and apples and mix together until evenly distributed.

Add in the oil, lemon juice, salt and pepper and mix together until everything is evenly coated.

Bake on a greased baking sheet for 35-40 minutes, or until the squash is fork tender.


The third dish is simple but packs a lot of flavor. Honey-balsamic carrots are the absolute best way to keep warm and stay healthy this winter.


Honey-Balsamic Carrots


  • 4 large carrots, peeled cut into quarters lengthwise
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey


Preheat the oven to 400º F.

In a medium bowl, combine all the ingredients and mix until each carrot piece is coated in the honey-balsamic mixture.

Bake on a greased baking sheet for 30-35 minutes or until the carrots are fork tender and slightly charred on the ends.
