Patriotic Overnight Oats

Overnight oats have long been something people ate, but didn’t really become a trend until Quaker Oats decided to force them back on people with recipes on the backs of their canisters. However, I decided to take my own approach.

Independence Day is usually a time to have a cookout and decorate with red, white and blue. But what about making breakfast red, white and blue? Lots of people tend to have family stay with them on the long weekend, and what better way to show patriotism than to serve your guests a healthy and nationalistic breakfast?

You can probably sense the sarcasm in my praise of America, but this my praise of this dish isn’t. Not only is it seasonal, the blueberries and strawberries are healthy and the oats take on this thick, porridge-like texture overnight to create a comforting breakfast.

So have fun with your 4th of July celebrations and eat hotdogs responsibly!

  • ¾ cup rolled oats
  • ¾ cup milk (I used almond, but you could use cashew, coconut or dairy milk as well)
  • ½ cup plain greek yogurt
  • 2 tablespoons chia seeds
  • ¼ cup blueberries
  • ¼ cup diced strawberries

In a small bowl, mix together the oats, milk, yogurt and chia seeds, and let sit for 5 minutes to thicken.

In the bottom of a 1 pint mason jar, add a scoop of the oat mixture, then a layer of berries. Continue, alternating between blueberries and strawberries until all the oat mixture is used up, then top with some more fruit.

Seal the jar, then keep it in the fridge 8 hours to overnight.
